Bacon, Cheese and Egg Muffins

Here is a yummy breakfast muffin that is easy to make and great when on the go.

(In this instructable, I have doubled the recipe - have lots of little kids coming over for Easter)

Ingredients

1 small  Onion, diced
1/3 cup  each diced Sweet Red and Green Pepper
1/3 cup vegetable oil
2 cups all-purpose flour
1/4 cup cornmeal
1 tbsp granulated sugar
1 tsp baking powder
1/2 tsp  baking
soda
1/2 tsp salt (or bacon salt)
1/4 tsp pepper
1/4 tsp dried thyme
1 cup  shredded Cheddar Cheese
1/2 cup  diced cooked bacon (4 slices)
1 Egg
1-1/4 cups milk

In a microwaveable bowl, combine the onion, red and green peppers and oil. Cover and cook in the microwave on High for  about 1 to 1-1/2 minutes to soften the mixture. Put to the side for later.

Mix the Dry Ingrdients

In large bowl, combine flour, cornmeal, sugar, baking powder, baking soda, salt, pepper and thyme. Stir in cheese and bacon.

Cook That Bacon

Cook some bacon.

Alomost Done.

In another bowl, lightly beat egg; stir in milk.

Next, add milk mixture and vegetable mixture to dry mixture and stir until moistened.

Bake, You Can Smell the Bacon.....

Spoon batter into greased muffin cups. Bake in 375°F oven for 15 to 18 minutes 

Let cool in pan on rack 5 minutes

Take muffins
out to cool.

You could freeze these to keep for a breakfast on the go. I find these are best just after backing with a little melted butter.
