Cheesy Ramen "Omelet"

Looking for a new way to use up that ramen pack sitting in your cupboard? Whip up this easy, decadent recipe as either a light meal or a late-night snack!
Supplies
- Pack of dry ramen noodles (minus the seasoning packet)
- Thinly sliced vegetables of your choice. I used:
- Perilla leaves
- Carrots
- Onions
- Thinly sliced hot pepper (optional)
- 3 T flour
- 1 egg
- As much shredded cheese as your heart desires!

Cook your ramen noodles as indicated on the package.

Once your noodles are cooked, rinse them, and drain off the excess water.



In a large bowl, combine the drained ramen noodles with all other ingredients.
If the batter appears too thick, mix in a few tablespoons of water.

Heat up a non-stick skillet to medium heat.
Spread the mixture into the pan, creating an even layer.
Top the omelet with shredded cheese.

To help the cheese melt, cover the pan with a lid or aluminum foil.

Continue frying the omelet until the bottom gets crispy and the cheese is all melted.
