Coconut Power Bites

Pop in your mouth, tiny Coconut Bites. These are a super food that make a great snack for big and small kids. Great for lunches, hiking or camping. These will give you a lot of energy and satisfy your sweet tooth!

1/2 cup granola or oatmeal
1 cup pitted dates
2 tbsp cocao nibs
1/4 cup each dried apricots, cranberries and roasted ready to eat chestnuts
3 tbsp culinary coconut milk
1/2 cup flaked coconut for shaping
Place all ingredients except coconut flakes into a food processor. Pulse to chop
Then puree to slightly smooth, leaving some chunky texture.
Using a 1 tbsp ice cream scoop or spoon, scrape out of processor and roll into coconut flakes.
Shape with your hands into 1"-2" round balls, pressing the coconut into the ball.
Makes 10-12 balls.

Prep:

Gather the processed paste and with a 1 tbsp ice cream scoop or spoon drop into coconut

Shaping

Roll into the coconut shaping into a round ball.
Continue until all paste if formed.
