      first put two tablespoons of flour in the bowl, add the two eggs and whisk until a smooth dough is formed.
The mixture should be slightly liquid (see Video in the next step) - if the dough is too firm, add some water, if it is much too liquid, stir in some flour
Some salt / pepper or other spices of choice (e.g. curry) can now be stirred in.
This mass is now left to stand for about 10 - 15 minutes - in this waiting time you can already prepare the tomato salad

      Cut the washed tomatoes and onion into small cubes and put them in a salad bowl
Spice Up the Salat
 
       
       
       
      Now season with salt/pepper and your herbs. Here in Germany there is a ready-made spice mix for tomatoes. I use this, but with salt and pepper the basis is already made.
Add oil and a little vinegar, finely chopped or dried parsley and or chives.
Mix well and taste, season if necessary.

      Put the pan on the stove, add a little oil, and preheat slowly over medium heat
I use our cast iron skillet because it distributes the heat well. But it works with any other pan too
Provide the cheese and here is an example of other options: We put a slice of tomato on some of the loaves. But maybe you have other ideas?

      now spoon small mounds of the mixture into the pan and sprinkle with cheese. If you like you can add a slice of tomato or anything else you like.

      Now comes the lid on the pan. This is important so that the heat also melts the cheese from above and the loaves do not become too dry.
Because of the closed cooking space, the parts get the desired temperature from all sides and the dough rises well.

      when the cheese has completely melted and the loaves have turned a nice golden brown color, you can take them out of the pan.
Put the rest of the mix back into the pan, sprinkle with cheese and put the lid on. These I have made a little larger than the first, so there are now four instead of six.
The basic dough makes about 10 - 12 pieces depending on size
