Cottage Cheese Pancakes


In this Instructable, learn how to make cottage cheese pancakes. They are a little healthier than normal pancakes and have 8 to 10g of protein per pancake without the cottage cheese taste.

Supplies

Ingredients:
- 1 cup of cottage cheese (220g)
- 1 ripe banana
- 2 Tbsp honey (30g)
- 1/2 tsp of vanilla
- 1/3 cup of almond flour (40g)
- 1 tsp of baking powder (5g)
- 2 eggs
- 1/2 cup of flour (60g)
Tools/Equipment
- Bowl
- Food processor or blender
- Spatula
- Whisk
- Turner
Blend

Begin by blending together the cottage cheese, ripe banana, honey, and vanilla extract in a food processor or blender, just until smooth.
Mix




Next, add the eggs and stir those in along with the flour, almond flour, and baking powder. Just use a fork or spoon to mix it all together. You could technically do it all in the food processor, but you just want to be careful not to overmix the batter.
NOTE: If you can't have gluten, use a 1:1 gluten-free flour or add more almond flour.
Cook


Now time to cook those pancakes up. Set your heat to medium-low to medium and allow it to heat up. Add a little bit of cooking oil to the pan or griddle. Add about 1/3 to 1/2 cup of batter for each pancake. Allow them to cook for a few minutes until golden brown on the bottom, flip them over, and cook an additional minute or so to brown the other side.
Serve



I like to keep these on the healthier side, so I just add a little bit of honey instead of my usual maple syrup and powdered sugar, haha. But serve them however you want, so many possible options for toppings. Enjoy!
