We have a grinder that does an amazing job of changing regular cheap rice into rice flour, but you can just buy your rice flour. So all you do is combine a half cup of dry milk mix (it has to be DRY milk), with a half cup of regular cornstarch (We buy ours in bulk at Sam's Club because we make A LOT of gluten free bread), and... the other ingredient is instant potato flakes, SO add a half cup of that along with two cups of the rice flour. And THAT's the flour mixture Mom uses for EVERY kind of gluten-free bread she makes. Just put them all in the bread machine pan together.
Next, add a half teaspoon of salt and one teaspoon baking powder but check the label to make sure yours is gluten free.
You'll also need two teaspoons of guar gum. You can buy guar gum online or at a health food store, but you HAVE TO have it. If you leave it out, your bread will smell great but it will just crumble out of the pan. Guar gum can be kind of expensive but it stretches a LONG WAY since you only use a small amount for each loaf.
The eggs for this recipe need to be at room temperature so place them in a bowl of very warm water for a few minutes before adding them. This is important so don't skip doing it. It will help the batter stay nice and warm which makes everything work better and faster when the yeast gets added next.
So measure one and two-thirds cups of very warm water, and then one tablespoon of yeast followed by two tablespoons sugar. Sprinkle it all over the surface of the water and stir gently. Let this warm mixture sit for about five minutes...
...and then pour it in.
The last thing to add is one teaspoon of regular white vinegar and we're ready to place the pan into the bread machine.
Set the bread machine to a one hour setting, sometimes called the "quick bread" setting. If you can carefully scrape along the sides and bottom of the pan with a wooden spoon or a rubber spatula, it helps everything get mixed really well.
