Easy Huevos Rancheros

This is an easy Huevos Rancheros recipe my mom taught me when I was young.
Supplies

- Vegetable Oil
- Salsa
- Colby Jack Cheese, shredded
- Eggs
- Corn Tortillas
- Avocado, sliced
Fry the Tortillas

At medium high heat, put 5 tablespoons of vegetable oil in a large pan until a few droplets of water sizzle in the oil. Gently place 3 corn tortillas in the hot oil. Fry the tortillas 1 1/2 - 2 minutes, then use tongs to gently flip. Fry an additional 1 1/2 - 2 minutes. Then remove the tortillas and place them on paper towels to absorb the excess oil.
Add Cheese and Salsa

Put 1 tablespoon of shredded cheese on each tortilla.
Put 1 tablespoon of salsa on each tortilla.
Microwave until the cheese is melted, approximately 45 seconds.
Cook the Eggs

Fry the eggs to your preferred taste. I like mine over-medium with cooked whites and a runny yolk. To do this, I cook my eggs over medium heat for about 2 minutes, then flip and cook for another one minute. Remove the eggs from the pan and place on top of the tortillas with melted cheese and salsa.
Avocado Slices, Optional

I love avocado so I add it every chance I get! A few slices on top of each egg will do.
