Exotic Milk Rice
As a child I loved eating milk rice with cacao, it was the best food in the evening. Now I wanted to try something different. The idea of a milk rice with coconut milk came to my mind. I also wanted to mix it with exotic fruits to get the summer feeling of an isolated island in the Caribbean.

Supplies
- short grain rice (300 g)
- coconut milk (800 ml)
- water (300 ml)
- powdered bourbon-vanilla (1 pack)
- sugar
- salt
- desiccated coconut
- pineapple
- 2 bananas
- mango
ingredients for 4 servings
Mix the Ingredients
At first, mix water, the coconut milk, 3 tablespoons full of sugar and a pinch of salt in a pot. Turn on the stove, to a medium setting.
Cook the Rice
Now add the rice. It needs to be simmered for about 15 minutes and constantly stirred to reach the right consistency.
Add Flavour
After a while, you can see the rice is coming up. Now you have to add half a pack of powdered bourbon-vanilla-bean. Stirr it again till the whole liquid is absorbed by the rice.
Prepare the Fruits
Now the exotic fruit party begins. Dice the pineapple, cut the mango and the two bananas.
Convert Sugar Into Caramel Art
Before you plate the exotic milk rice, try some fancy caramel art. Heat some sugar in a pot, till it gets a light brown colour. After a while chilling, pour the caramel over a oiled spoon. If it has the right consistency you can pull strings and place it on the plate.
Plate the Milk Rice Up
At the end, my favourite part of serving food happens. Plate the milk rice up to a beautiful plate. Apply the fruits and the caramel. Finish with some desiccated coconut und love (the chef at my workplace always added something green at the end - this was the love and completed the plate).
