Gluten Free Strawberry Butter

Ingredients:
1 cup salted butter (at room temp)
1 cup chopped strawberries (cut off stems before measuring in cup)
3 TB honey
Instructions:
Mix all ingredients in your food processor until completely smooth. You will have to stop to scrape down the sides of the bowl a few times. At first it will seem grainy and like its not working....but keep going! All at once it will come together and become smooth. You are done when it resembles frosting.
Store in a tightly covered container in the fridge.
Notes: I had this in a restaurant once and fell in love. I like to serve this on gluten free toast....but it would also go well with pancakes or waffles!
