Homemade Grated Apple Pie (Tertyi Pliatsok)
Grated pie is a timeless comforting dessert that fills the whole house with a warm, cozy aroma. This recipe features a buttery, melt-in-your-mouth shortcrust pastry combined with a sweet and fragrant cinnamon-apple filling.
It is incredibly versatile and simple to make: during summer, serve it cold with a scoop of ice cream, and in winter, enjoy it warm with vanilla sauce. Let's bake together!

To make this delicious pie, you will need:
For the Dough:
- All-purpose flour: 350 g
- Unsalted butter (82.5% fat): 200 g (must be cold)
- Sour cream (20% fat): 2 tbsp
- Sugar: 2 tbsp
- Egg: 1 pc
- Baking powder: 2 tsp
- Salt: a pinch
For the Filling:
- Apples: 3 medium-sized apples
- Ground cinnamon: 1 tsp
- Sugar: 2 tbsp

- Coarse grater
- Baking pan (round or rectangular)
- Plastic wrap
- Rolling pin
Preparing and Chilling the Dough
- In a large mixing bowl, combine the flour, sugar, baking powder, and a pinch of salt.
- Cut the cold butter into small cubes. Add it to the dry ingredients and quickly rub everything together with your fingers until it forms fine breadcrumbs.
- Add the egg and 2 tablespoons of sour cream.
- Knead the mixture quickly into a smooth dough.
- Divide the dough into two equal portions. Wrap each piece tightly in plastic wrap.
- Place one portion into the refrigerator and the other portion into the freezer for 30 minutes.
Blind Baking the Base
- Preheat your oven to 180°C (350°F).
- Grease your baking form thoroughly with a small piece of butter.
- Take the dough portion out of the refrigerator (after 30 minutes of chilling).
- Roll it out using a rolling pin and press it evenly into the bottom of your baking pan.
- Bake this base layer in the preheated oven for 15 minutes until slightly set.
Making the Apple Filling
- While the base layer is baking, wash, peel, and core the apples.
- Grate the apples using the coarse side of a hand grater.
- Add 1 teaspoon of ground cinnamon and 2 tablespoons of sugar to the grated apples. Mix well.
Assembling and Final Bake
- Remove the pre-baked base from the oven.
- Spread the prepared apple-cinnamon mixture evenly over the warm crust.
- Take the second portion of dough out of the freezer.
- Grate it directly over the apple layer using a coarse grater, ensuring it covers the filling evenly.
- Return the pie to the oven and bake for another 40 minutes at 180°C (350°F), or until the top turns a beautiful golden-brown color.
