Homemade Grated Apple Pie (Tertyi Pliatsok)

Grated pie is a timeless comforting dessert that fills the whole house with a warm, cozy aroma. This recipe features a buttery, melt-in-your-mouth shortcrust pastry combined with a sweet and fragrant cinnamon-apple filling.

It is incredibly versatile and simple to make: during summer, serve it cold with a scoop of ice cream, and in winter, enjoy it warm with vanilla sauce. Let's bake together!



Supplies

To make this delicious pie, you will need:

For the Dough:

  1. All-purpose flour: 350 g
  2. Unsalted butter (82.5% fat): 200 g (must be cold)
  3. Sour cream (20% fat): 2 tbsp
  4. Sugar: 2 tbsp
  5. Egg: 1 pc
  6. Baking powder: 2 tsp
  7. Salt: a pinch

For the Filling:

  1. Apples: 3 medium-sized apples
  2. Ground cinnamon: 1 tsp
  3. Sugar: 2 tbsp

Tools:

  1. Mixing bowl
  2. Coarse grater
  3. Baking pan (round or rectangular)
  4. Plastic wrap
  5. Rolling pin

Preparing and Chilling the Dough

  1. In a large mixing bowl, combine the flour, sugar, baking powder, and a pinch of salt.
  2. Cut the cold butter into small cubes. Add it to the dry ingredients and quickly rub everything together with your fingers until it forms fine breadcrumbs.
  3. Add the egg and 2 tablespoons of sour cream.
  4. Knead the mixture quickly into a smooth dough.
  5. Divide the dough into two equal portions. Wrap each piece tightly in plastic wrap.
  6. Place one portion into the refrigerator and the other portion into the freezer for 30 minutes.



Blind Baking the Base

  1. Preheat your oven to 180°C (350°F).
  2. Grease your baking form thoroughly with a small piece of butter.
  3. Take the dough portion out of the refrigerator (after 30 minutes of chilling).
  4. Roll it out using a rolling pin and press it evenly into the bottom of your baking pan.
  5. Bake this base layer in the preheated oven for 15 minutes until slightly set.



Making the Apple Filling

  1. While the base layer is baking, wash, peel, and core the apples.
  2. Grate the apples using the coarse side of a hand grater.
  3. Add 1 teaspoon of ground cinnamon and 2 tablespoons of sugar to the grated apples. Mix well.



Assembling and Final Bake

  1. Remove the pre-baked base from the oven.
  2. Spread the prepared apple-cinnamon mixture evenly over the warm crust.
  3. Take the second portion of dough out of the freezer.
  4. Grate it directly over the apple layer using a coarse grater, ensuring it covers the filling evenly.
  5. Return the pie to the oven and bake for another 40 minutes at 180°C (350°F), or until the top turns a beautiful golden-brown color.

Let the pie cool down completely inside the baking pan before slicing.
