How to Make Grill Pan Chicken Caprese Skewers
Hi everyone! I love classic Caprese salad, so this week I decided to experiment with chicken Caprese with a twist. It turned out so well, that it became my (and the cameraman's) new favorite way to make chicken breast! The juicy burst of the cherry tomatoes combined with the balsamic glaze, pesto and the tender chicken is just perfection! And if you pile everything onto a crispy, buttery toast, you'll get an incredibly delicious bite. Seriously, you have to try this. I promise you, one bite and you'll be texting everyone you know about it!
Supplies
Ingredients (for 8–9 skewers):
Pesto:
• 15–20 Basil leaves
• 80ml / 2.7 fl oz Olive oil
• 10g / 0.35 oz Pine nuts
• 10g / 0.35 oz Parmesan cheese
• 1 Clove Garlic
• 1 tbsp Lemon juice
• 1/2 tsp Salt and pepper
Balsamic glaze:
• 100ml / 3.4 fl oz Balsamic vinegar
• 1 tbsp Honey
• A pinch of salt
Chicken skewers:
• 400g / 14.1 oz Chicken breast
• 100g / 3.5 oz Cherry tomatoes
• 50g / 1.8 oz Mozzarella balls
• 1/2 tsp Salt and pepper
• Drizzle of lemon juice
• 1 tbsp Olive oil
• 8–9 Wooden skewers
Toast:
• A Bread of your choice
• Butter to toast
The Pesto
Put the basil leaves, pine nuts, garlic clove, salt, pepper, olive oil, grated parmesan and lemon juice in a food processor or chopper, and blend until smooth.
The Balsamic Glaze
Pour the balsamic vinegar into a small pot over medium-low heat, then add the honey and salt. Simmer the mixture until it reduces, caramelizes and thickens into a glaze.
The Skewers
Dice the chicken breast and place them in a bowl. Season with salt, pepper, a drizzle of lemon juice and a tablespoon of olive oil. Mix well to coat the meat evenly. For the skewers select cherry tomatoes that are approximately the same size. To assemble, start with a cherry tomato, then add a chicken piece. Stack and finish with a cherry tomato. Make sure to leave some space at the ends of the stick, so you can add the mozzarella balls after the grilling. Heat a grill pan over medium heat. Add some olive oil and line up the skewers, grilling them for about 3–4 minutes per side until the chicken is fully cooked.
Assemble
Once ready, slide a mozzarella ball onto each end of the skewers. Drizzle the fresh pesto and balsamic glaze over the top.
