How to Make Mac & Cheese Pancake
Hi folks! This week we're cooking a mac & cheese pancake that is a perfect hangover cure after a fun summer night out, or when you need some extra calories to start (or continue) the day! :) Pair it with a refreshing drink to stay hydrated!
Supplies
Ingredients for two portions:
• 100g / 3.5 oz Macaroni
• 50g / 1.8 oz Grilled or smoked bacon
• 50g / 1.8 oz Cheddar cheese
• 50g / 1.8 oz Mozzarella cheese
For the cheese sauce base:
• 40g / 1.4 oz Butter
• 40g / 1.4 oz Flour
• 250ml / 8.5 fl oz Milk
• 50g / 1.8 oz Cheddar cheese
• 1 tsp Gochujang
• ½ tsp Salt and pepper
• ½ tsp Ground nutmeg
• Thyme
Pancake batter:
• 2 tbsp Flour
• 100ml / 3.4 fl oz Milk
• 1 Egg
• A pinch of salt and sugar
• ½ tsp Butter
Cook the Pasta
Bring a pot of salted water to a boil and add the macaroni. Stir immediately and boil for 7 minutes, then drain the water and set aside.
Make the Cheese Sauce
Warm up the milk with a sprig of thyme. In another small pot melt the butter over medium-low heat. Add the flour and stir for about a minute, until you get a blond roux. Once the milk is warm, remove the thyme and gradually add the milk to the roux, stirring constantly until a creamy sauce forms. Season with salt, pepper, nutmeg and a teaspoon of Gochujang for extra flavor and a bit of a spicy kick. Mix well, add the grated cheddar cheese and stir until combined. Finally, fold the macaroni into the cheese sauce.
Prep the Bacon
Dice the bacon into cubes. Fry them in a dry pan over medium-low heat for about a minute until crispy. (Note: If you don't want them too crispy since they will cook again later, just dice them and save them as a topping for later).
Make the Batter
For the pancake batter mix the egg, milk, flour and seasoning. Whisk well until there are no lumps.
Cook the Pancake
Heat up a pan over medium-low heat and grease it with a little butter. Pour in the pancake mixture, then lower the heat to low. Wait until you see the bottom of the pancake start to cook, then spread a portion of the mac and cheese evenly on top of the batter, followed by a layer of mozzarella and cheddar cheese. Sprinkle the bacon cubes over the top.
Grill and Enjoy
Place the pan under the oven broiler (grill function, top heat only) for about 2 minutes at 200°C (390°F) until the cheese is golden and bubbly.
