How to Make Pig Feet Souse!

A local delicacy in the Caribbean, souse made from pig or chicken feet is quite yummy. I myself am an addict and for years I have always wanted my own home blend. Since acquiring a neat little pressure cooker (thanks to the wife), I can now make souse!
The Meat.

Frozen pig feet is easily sourced from local supermarkets or meat vendors.
The Pressure Cooker.

The meat needs to be pressure cooked to make it tender and succulent.

With the pieces washed and then covered in water, I put 2 tablespoons of salt in. Sealing the pressure cooker lid, I put the heat on medium and left it for half hour.
Seasoning.

Once the cooker cooled off naturally, I put lime juice and lots of Shadowbeni into the pot. Next I stored the goodness in a plastic container for later enjoyment.
