::Thinking to self:: "Mmm, Thanksgiving dinner was deeelicious. But now what to do with all these leftovers?? I know, I'll make a Leftover Turkey Pot Pie!"
To make the Leftover Turkey Pot Pie, I gathered my leftovers. There wasn't much left, not even any gravy, but I made due with what I had.
Left Overs:
Turkey
Potatoes
Apple Pie Dough
Added:
Cream of Mushroom Sauce
3" Pot Pie Pan
Prep:
Preheat the Oven
Slice the Potatoes

Split the pie dough into two and roll out one side of the dough to about 1/8" thick. Place this at the bottom of the pan. The original apple pie was made following a recipe at http://www.myhomecooking.net/apple-pie/, I only had dough left over.
Add the Filling

I layered the filling putting the turkey in first, then the potatoes.
Add the Gravy

If you had left over gravy, this would be great. Unfortunately, my gravy was eaten on Thanksgiving. So I did the next best thing, store bought gravy.
I used Cream of Mushroom Sauce. I only needed about 2 spoonfuls for the smaller pie pan. It was a little to thick, so I mixed it with water in a bowl. Then I added it to the pie.

I took the other half of the pie crust and rolled it out and added holes to it. Then I put it on top of the pie pan and pushed the top and bottom together to "seal" it.
Bake

If you add a brushing of eggs to the top dough before baking, it should give a nice brown color. I forgot and did not today. Place the pie pans into the oven and Bake at 350 for 15 - 20 minutes.
Remove, Cool, and Enjoy
