Lemon-Lime Blondies
These are a treat made with lemon and lime that has the consistency of a brownie. It's easy to make and delicious.

Ingredients
Blondies
1 Cup all-purpose flour
1 Cup white sugar
8 TBSP unsalted butter, softened
2 eggs
1 TBSP vegetable oil
1 TBSP lemon juice
1/2 tsp salt
1 TBSP lime juice
1/2 TBSP lemon zest
1/2 TBSP lime zest
Glaze
2 Cup confectioners' sugar
1/2 Cup lemon/lime juice
1/4 tsp. vanilla extract
Zesting
If you are familiar with getting zest, you can skip this step.
Wash the lemons and lime well. This is to remove any wax or pesticides added to the fruits. Dry them.
Rub the fruit briskly against the zester, being careful not to get to much of the pith (the white layer below the outer skin). The pith is very bitter.
Collect the zest.
Mix and Cook
Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
Beat flour, white sugar, butter, and salt together in a bowl using an electric mixer until well mixed.
Whisk eggs, 1 TBSP lime juice and 1 TBSP lemon juice, oil, and zest together in a separate bowl, then combine into flour mixture.
Beat on medium speed until smooth, about 3 minutes.
Pour into the prepared baking dish.
Bake in the preheated oven until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool until bottom of dish is warm to the touch.
Whisk confectioners' sugar, 1/2 cup juice, and vanilla extract together in a bowl until smooth; pour over blondies.
It's not necessary to use all of the glaze.
Serve Them
These things are pretty tasty. Honestly, they are good enough by themselves that the glaze could be left out. These can be eaten warm, but they would be a heck of a lot easier to cut if I had let them cool some more. I really just couldn't wait!
