Make This Lemon Lush You Won't Be Disappointed!

In this Instructable, I will show you how to make Lemon Lush. It is a layered dessert that is perfect for the summer. It is cool, sweet, and refreshing. If you are looking for something awesome to bring to a party that is incredibly easy to make, this is it!

Supplies

Ingredients:

  1. 2 cups of flour (240g)
  2. 1 cup of butter, softened (226g)
  3. 16 oz of cream cheese (453g)
  4. 1 cup of white granulated sugar (200g)
  5. 2 (3.4 oz) containers of instant lemon pudding (96g containers, 192g total)
  6. 8 oz tub of whipped topping, or make your own sweetened whipped cream (226g)

Tools/Equipment:

  1. Bowls
  2. Pastry blender, fork, or food processor
  3. Spatula
  4. Offset cake spatula and pastry roller work great
  5. 13x9-inch baking pan
  6. Hand or stand mixer

Make the Bottom Crust Layer

Preheat the oven to 350F/176C

Combine the soft butter and the flour in a large bowl and mix until well combined. Use a fork, pastry blender, or food processor.

Then, once the dough comes together, press it down evenly into a greased/sprayed baking pan. Use something like a pastry roller or offset cake spatula to evenly spread it out.

Bake the crust in the oven for 20 to 25 minutes until barely lightly golden brown. The sides might pull away from the pan just a tiny bit.

Allow the crust layer to cool down for about 20 to 30 minutes.

Cream Cheese Layer

Time to make the next layer, which is the cream cheese frosting layer. Combine soft cream cheese and sugar in a large bowl using a mixer.

Next, spread it evenly across the top of the cookie/shortbread crust layer. Use an offset spatula to make it really easy to evenly spread it.

Time for the lemon pudding layer. You can make your own lemon pudding from scratch or make the cook-and-serve kind. OR it is very common to just use the instant lemon pudding mix.

Mix the pudding packets and the cold milk together in a large bowl for 2 to 3 minutes until it starts to get thick.

Then pour it onto the cream cheese layer and spread it out evenly with a spatula.

Put the dessert in the fridge for at least 30 minutes to set. You can keep it in there for several hours before you want to serve it.

Whipped Topping Layer

And finally, we have the whipped topping or sweetened whipped cream layer. I usually use the whipped topping because it is quick and easy. Just spread it over the very top to complete the dessert. Do this right before you want to serve it, or a few hours beforehand.

Serve

Now cut it up into squares; you should be able to get 15 to 20 servings from it, depending on how large you make the squares.
