Making of Rasagula (A Bengali Sweet)
Ingredients Required
Milk - 1 litre
Lemon juice / curd - 2-3 Tbs
Sugar - 1 cup
Water - 2 cups
Cardamom - 1-2 pods
Curdling of Milk
Boil 1 Litre of milk in a vessel. After it has boiled, add lemon juice (or curd) and stir. The milk starts curdling.
After the milk has curdled completely, strain it using a cloth and wash it thoroughly so that the sour taste of lemon does not remain. Hang it in the cloth for maximum fifteen minutes.
Making of Rasagula Balls
Take out the strained curdles of milk and knead it using your hand. Make medium sized balls out of it. 1 litre of milk gives about 10 - 15 balls.
Sugar Syrup
Take one cup of sugar in a vessel, add two cups of water and heat it. When it starts boiling, add the Rasagula balls into it. Cover the vessel with a lid. Add cardamom seeds into it ad boil some more time. After sometime the balls will become about double the size. Switch off the flame and your Rasagula is ready!!!
Serve it after cooling for better taste
N.B.. The amount of sugar can be varied according to your taste. The amount given here will be good to get a 'not too sweet' Rasagula.
