How to Make "Not So Fruit" Salad

Not so Fruit Salad

Greetings everyone! We are making a fresh spring salad with strawberries and a bit of veggies, greens and nuts. It's full of flavor and nutrition, and although it has strawberries, I can't call it a fruit salad so I named it a "Not so fruit" salad... If you can come up with a better name, let me know! :)

Ingredients:

• 100g / 3.5 oz (approx. 4 cups loose) Watercress

• 70g / 2.5 oz (approx. 2 cups) Baby spinach

• 100g / 3.5 oz (approx. ½ cup sliced) Strawberries

• 30g / 1 oz Cucumber

• 30g / 1 oz Carrots

• 1 pc. Spring onion

• 30g / 1 oz Mozzarella balls

• 30g / 2 tbsp Yogurt

• 10g / 1 tbsp Pistachios

• 10g / 1.5 tbsp Almond flakes

• 1/2 tsp salt and white pepper

• Juice of half a lemon

• A few basil leaves

Use a peeler to create carrot ribbons (strips). Quarter the cucumber lengthwise and then slice. Slice the strawberries and spring onion. Roast the almond flakes (optional). In a small bowl whisk together the yogurt, lemon juice, salt, pepper and finely torn or chopped fresh basil leaves.

Place the prepared vegetables and fruit into a large bowl with the washed watercress and spinach. Toss in the pistachios, almond flakes and mozzarella balls. Put the dressing over the salad and mix gently to combine.
