One-pan Baked Chicken Fajitas

Minimal post dinner dish cleanup and delicious food?! Sounds like a win-win! Inspired by the colors of the rainbow from nature’s own garden, this one-pot chicken fajita dish is perfect for any weeknight, celebration, or just to eat! Who knew that instead of a pot of gold at the end of a rainbow it would be a pot of dinner?!

Supplies

Tools:

  1. -9x13 inch rectangular pan (or similar)
  2. -tin foil (optional) (*can also use tinfoil instead of a pot to make individual servings)

Ingredients:

  1. -olive oil
  2. -salt and pepper to taste
  3. -4 bell peppers (preferably the colors of the rainbow! Red, orange, yellow, green.)
  4. -1 small red onion
  5. -4 cloves garlic
  6. -1 cup of mushrooms (baby bella or two portobello)
  7. -1 lime
  8. -1/2 cup chopped cilantro
  9. -4 chicken breasts
  10. -3 teaspoons taco seasoning or tajin
  11. -1/2 tablespoon ground cumin
  12. -1/2 teaspoon paprika
  13. -1/2 teaspoon chile powder
  14. -1/2 tablespoon dried oregano
  15. -1/2 teaspoon garlic salt
  16. -1/2 teaspoon elote seasoning (optional)
  17. -1/2 cup salsa
  18. -roughly 1/2 cup shredded cheese

Optional extras:

  1. Avocados or guacamole
  2. Rice
  3. Beans
  4. Sour cream (garnish)
  5. Cilantro (garnish)

Red, Orange, Yellow, Green

Preheat your oven to 425 degrees Fahrenheit. In the meantime, slice the bell peppers into thin strips. I of course had to draw inspiration from a rainbow and started with red, then orange, yellow, and green! Toss those in the pan.

Red Onion...? (Let's Go With Purple Onion...)

Take your red purple onion and thinly slice it. Don't worry, this will be one in a mill-onion! Toss those in the pan alongside the peppers. Mince the garlic and add to the pan.

Is There Mush-room for More in the Pan?!

Slice your mushrooms and add to the pan. Drizzle about one and a half tablespoons of olive oil evenly over the pan and sprinkle with salt and pepper to taste. Olove this recipe so mush!

Adding even more green to the rainbow fajitas, juice the lime evenly into the pan. Sprinkle the chopped cilantro on top.

Slice the four chicken breasts into strips. Cut the breast in half if it is initially too thick. Lay evenly on top of the ingredients in the pan, trying not to pile the chicken on top of itself. You're doing a great job even if you're winging it!

Let's Spice Things Up

Sprinkle your seasoning or taco seasoning evenly over the chicken. Then, add all of the other spices evenly in layers over the chicken. You can either premix, or do a layer one at a time.

Keep Calm and Salsa on (or Is That Too Cheesy?)

Spoon your salsa of choice evenly onto the chicken. Top with shredded cheese. I hope that you think this tastes grate!

Bake It Till You Make It!

Put the pan into the oven for one hour or until the chicken reaches an internal temperature of 160 degrees Fahrenheit. You can either put tin foil on top to prevent the cheese from getting a bit crispy, or simply leave off.
