Perfect Almond Cake (Vintage Archive Recipe)
Handwritten notes from the past often tell a beautiful story that goes far beyond a simple list of ingredients. I first discovered this unique almond and apple cake at the Solomiya Krushelnytska Musical Memorial Museum in Lviv, during a warm and welcoming lecture by researcher Halyna Ohorchak titled "The Language of Solomiya Krushelnytska’s Recipes." It was fascinating to learn about the daily household life of the world-famous opera singer, the historic weights and measures used by families at the time, and the old names for kitchen tools. The lecture also brought to life archival notes by Olha Franko, beautifully reflecting the elegant lifestyle of early 20th-century intellectuals.
That afternoon, I had my very first taste of this wonderful vintage almond cake called by Solomiya Krushelnytska Pliatsok Doskonalyi ( Perfect Cake), which Halyna Ohorchak had baked specifically for the event using the original text from Solomiya Krushelnytska’s notebook. I came home inspired, carrying a copy of the adapted recipe card, and later on, I was fortunate enough to see the original archival manuscript itself.
I adjusted the historic recipe slightly to fit my own 8-inch (21 cm) baking pan. For me, recreating this recipe is a joyful way of preserving cultural memory, language, and family heritage, all beautifully woven into the daily rhythm of life.
Supplies
To make this baking experience smooth and enjoyable, I use the following kitchen tools:
- An 8-inch (21 cm) round baking pan
- A hand mixer or a stand mixer for whipping the whites
- Three deep mixing bowls and a small cup
- A food processor or blender to grind the almonds into a fine crumb
- A sharp kitchen knife and a cutting board for the apples
- A small saucepan with a lid for simmering the filling
- A silicone spatula for gentle folding
- A fine grater to prepare the lemon juice or zest
- A pastry brush for the egg wash
- A wire cooling rack
Gathering the Ingredients
For the dough:
- Unsalted butter (82.5% fat) — 7 oz (200 g), softened
- Granulated sugar — 1 cup (200 g / 7 oz)
- Almonds — 2 cups (200 g / 7 oz), blanched and finely ground
- Egg whites — 4 large
- All-purpose flour — 1 ⅔ cups (200 g / 7 oz)
- Vanilla sugar — 2 tsp (10 g)
For the filling:
- Medium semi-sweet apples — 2 pcs
- Granulated sugar — 1 tsp
- Ground cinnamon — 1 tsp
- Fresh lemon juice — 1 tsp
- Water — 3 tbsp (40 g)
For the topping:
- Egg yolk — 1 large
- Water — 1 tbsp
- Sugar and chopped almonds — a handful
Preparing the Apple Filling
The evening before baking, I finely dice the two medium semi-sweet apples. I simmer them in a small saucepan for about 5 minutes along with one teaspoon of sugar, the cinnamon, fresh lemon juice, and water. After this, I cover the saucepan with a lid and leave the apples until they cool down completely, allowing the spice flavors to marry.
Creaming the Butter and Sugar
In a deep bowl, I thoroughly cream the softened unsalted butter and granulated sugar together until smooth. Then, I stir in the finely ground almonds until well combined, creating a rich and fragrant base.
Whipping the Egg Whites to Stiff Peaks
In a separate bowl, I whip the 4 egg whites until stiff peaks form. I gently fold the whipped whites into the almond-butter base in small portions using a spatula, working carefully from the bottom up to keep the mixture light and airy.
Adding Flour and Vanilla Sugar
Next, I sift the all-purpose flour into the bowl and add the vanilla sugar. I gently fold everything together with a spatula from the bottom up until I get a thick, uniform dough.
Layering the Cake in the Pan
I preheat my oven to 350°F (180°C). I grease my 8-inch (21 cm) baking pan generously with a bit of butter. I spread half of the almond dough evenly across the bottom of the pan, arrange the layer of pre-cooked, completely cooled apples over it, and then cover the filling with the remaining half of the dough, smoothing the top with a spatula.
Glazing and Garnish the Topping
In a small cup, I mix one large egg yolk with 1 tablespoon of water. I brush this mixture evenly over the surface of the dough. Then, I sprinkle a handful of sugar and chopped almonds over the top to create a wonderful, crunchy crust.
Baking and Cooling Down
I bake the cake at 350°F (180°C) for about 40 to 50 minutes until the top turns a beautiful golden brown. Once baked, I remove it from the oven and keep the pliatsok inside the pan on a wire cooling rack until it cools down completely. It is absolutely wonderful served with a cup of warm tea or coffee!
