Ingredients:

  1. potatoes
  2. salt
  3. pepper
  4. cooking oil like olive oil or avocado oil

Tools:

  1. Waffle Iron is the exact one I have, but they are expensive, restaurant-quality. I have had mine for over 15 years. This one should work just fine, too, and is much cheaper.

Begin by cooking and softening the potato. It needs to be really soft before it goes in the waffle iron. You can either microwave it for 5 to 7 minutes, or boil it for 20 to 35 minutes, or bake it in the oven for 45 to 55 minutes. Or maybe you have a leftover baked potato from the previous evening's dinner, which would work awesome.

You can peel the potato if desired or leave the skin on. I like the skin, so I always leave it on.

Poke some holes in the potato first before cooking it. Then poke more holes in it after it is soft, which will help it flatten more easily in the waffle iron.

Spray the waffle iron with cooking oil as well as the potato, then add some salt and pepper to it. Do both sides.

Waffle It

Once the waffle iron is preheated, add the softened potato to the middle and close the iron and cook it until it is brown and crispy. It will take 5 to 7 minutes or so.

Serve It Up

Remove the potato waffle with tongs and serve it however you like. I like to add a bit of ketchup to it and have a few eggs with it. You could also do a dollop of sour cream, green onions, cheese, bacon, etc.

Enjoy!
