Potato and Spaghetti Soup

Have you ever eaten something that tastes like motherly love and just makes you feel great with every bite/sip? This soup is SO delicious and easy to make you'll want to make it and share with those you love.

Ingredients

400 grams of potatoes

200 grams of carrots

1 leek

2 tablespoons of olive oil

500 gr spaghetti

Salt

Powdered chicken bouillon

Leek

Wash your leek and chop it in medium size pieces.

Put the olive oil in a hot pan and place the chopped leek on it.

Stir constantly so it doesn't burn.

Carrot

Cut the ends of the carrots. Peel them and cut them in thin slices. This veggie gives the soup a beautiful color and flavor!

Put them in your pot with the oil and leek.

Potato

Peel your potatoes and cut them in little cubes. I've only tried this recipe with white potatoes but it would be interesting to try other kind of potatoes.

Put them in your pot with the other veggies. Keep stirring.

Water

Put 3 cups of water in your pot and let your veggies cook for 15 minutes in low heat. When your potatoes are tender but still firm you can add 1 tablespoon of chicken bouillon and salt.

Spaghetti

I like to cut the spaghetti in 3 for this recipe because I think it's better for the flavor to have smaller pieces of spaghetti. Place your spaghetti in the pot with the other ingredients and add 4 cups of water. Let it cook for 10 minutes and when your spaghetti looks cooked your soup is ready!

Serve hot and enjoy!
