Quick and Easy Miniature Pancakes



I've always loved pancakes, and tiny foods. So, what better way to enjoy breakfast than to combine the two together! You can serve these tiny pancakes for breakfast, a quick snack, or even a dessert if you want to get creative. These delicious, fluffy pancakes only have four ingredients and are sure to bring a bit of magic to your meal!
Supplies


For these pancakes, the recipe I used is from Betty Crocker Kitchens. The ingredients are:
- 2 tablespoons vegetable oil
- 2 large eggs
- 1 cup of milk
- 2 cups of Original Bisquickâ„¢ Baking Mix
You also need a medium-sized bowl, a spatula, a pan, and some cooking spray (butter works fine).
Adding in the Ingredients




Mix all of the ingredients together in the bowl. Luckily, the order you add ingredients doesn't matter.
Mixing the Batter



Mix the batter together until it's smooth. Make sure to scrape the sides of bowl to get any extra batter.
Preparing the Pan

Grease the pan with cooking spray (or butter), then heat it to medium-high heat. You'll know it's hot enough to cook the pancakes when you flick a little water on the pan and it sizzles.
Measuring Out the Right Amount


Take a teaspoon and fill it with batter. (This is to ensure all the pancakes are tiny and relatively the same size).
Making the Pancakes


Drop the batter onto the pan, then fill again and drop several more. With my pan, the most comfortable amount of mini-pancakes I can fit is six.
Flipping the Pancakes



After waiting until the edges lift up, (no more than 30 seconds), slide the spatula under the pancake and flip. Repeat for the rest of the pancakes.
Putting Them Away


Once all the pancakes are fully cooked, put them on a plate. It's quicker to slide them right out of the pan.
Finishing the Pancakes



Repeat pouring and flipping until you have the amount of pancakes you want, (or run out of batter, whichever comes first) then enjoy!
Storing
If you have extra pancakes left, you can always store them in a Tupperware for a day or two (when they start to get soggy).
