Ruby Rose Cooler : a Homemade Summer Drink Made With Rose Petals & Beetroot
Summer makes me want something cold and refreshing all the time, but I didn't want to make another ordinary lemonade or buy a packaged drink.
So I tried making a drink with rose petals and beetroot. The result was a beautiful deep-red drink with rose fragrance and a naturally bright colour.
It is very simple to make, and you can easily adjust the sweetness and strength according to your taste.
The best part is, no artificial colour or packaged drink mix is needed.
Supplies
What You Need (for 2 glasses)
Fresh rose petals – 10 to 15 roses
Beetroot — 1 small
Water — approximately 3–4 cups
Sugar — 1 cup
Cardmon – optional
Ice cubes — optional
Pick & Prepare the Rose Petals
Pick fresh, edible roses that haven't been treated with pesticides.
Gently remove the petals from the flower.
Wash them thoroughly with clean water.
Make the Rose Water
First, boil the water.
Turn off the heat and add the washed rose petals and cover the container.
Leave it for about 1 hours ( You can leave it for 30 minutes if you don’t have much time )
I left mine for around 1 hour because I wanted a stronger rose colour and fragrance. If you are short on time 30 min. also works.
Make the Beetroot Extract
Take one small beetroot and grate it ( you can either grind or grate the beetroot )
Put the grated beetroot into a pan with some water and boil it for a few minutes.
The water will slowly turn a beautiful dark red.
Let it cool.
Make the Sugar Syrup
Add 1 cup sugar and 1 cup water to a pan.
Heat it until the sugar completely dissolves.
Let it cool.
Mix Everything
Now comes the fun part!
Mix the rose-infused water and add the beetroot extract to the sugar syrup.
Mix well.
You can adjust everything here:
More rose water – stronger floral flavour
More beetroot water – deeper colour
More syrup – sweeter drink
Chill & Serve ❄️
Put the drink in the refrigerator until it is nicely chilled.
Add ice before serving.

And that's how I made my Rose & Beetroot Summer Cooler.
There is no complicated equipment or difficult technique involved. Just infuse, boil, mix, chill and enjoy.

A Small Tip
Don't throw away the beetroot pulp after straining! You can add it to a vegetable dish, curry, soup or even a paratha mixture.
So, almost nothing goes to waste.
