Soak Lotus Seeds
Start by soaking the lotus seeds in lukewarm water for at least 2 hours. It's essential to avoid using cool or cold water, as it may affect the texture of the lotus seeds.

Cook the Chicken and Lotus Seeds

In a pot, combine the chicken thighs, ginger, soaked lotus seeds, red dates, and goji berries. Add a pinch of salt to enhance the flavors. If you are using a pressure cooker or instant pot, close the lid and cook the ingredients for 15-20 minutes.
