Try this great brunch recipe, it's quite the twist on Huevos Rancheros making them simple and compact. Ingredients

Ingredients

Note: All ingredients here are for one serving

  • 2 eggs
  • 2 tortillas
  • 2 tbsp black beans
  • 1 tbsp salsa
  • 1 tbsp guacamole
  • salt & pepper to taste


Tools

  • muffin tin
  • cooking spray
  • small bowls x3
  • a spoon
  • and an oven set to 350 degrees

Spray the Tin

Make sure you spray the muffin tin well with cooking spray so your cups don't stick.

Stuff & Cut

lightly press the tortillas into the muffin tins so they form little cups and trim off any access tortilla from the top.

Bake

Bake the cups for about 10 minutes in an oven at 350 degrees just to get them started a little.

Beans & Salsa

Once out of the oven you can add the 2 tablespoons to the bottom of the cup and the salsa on top of that.

Crack That Egg

Next Crack your eggs into your cups on top of the salsa, pop them back into the 350 degree oven for another 10 minutes or until the eggs are cooked to your liking.

Top It Off
