Simple Lemon Bars
These Lemon Bars are easy to whip up, and are great for parties and other gatherings. They are full of lemon flavor, with a nice added crunch of vanilla wafer crust.
Store chilled and serve after meals.

Ingredients:
For Crust:
20 vanilla wafers
½ cup flour
¼ cup powdered sugar
½ cup butter, melted
For Filling:
3 ounces cream cheese, softened
1 tablespoon grated lemon zest
¼ teaspoon salt
1 can (14oz) sweetened condensed milk
2 large eggs + 1 egg yolk
⅔ cup lemon juice
Garnish:
Shredded coconut
Prep
Preheat oven to 325 degrees. Line a 9x13 baking dish with foil, and grease it with oil spray.
Crush Them
Crush the vanilla wafers to a powder. Combine them, with the flour, powdered sugar, and melted butter, in a small bowl, and stir until it barely holds together. If it doesn’t hold together at all, then add a bit more melted butter or oil. Press this crust evenly onto the bottom of the foil in the pan.

Bake the Crust
Press this crust evenly onto the bottom of the foil in the pan.
Bake the crust in the preheated oven for around 20 minutes, until browned. Set to the side.
Whisk the cream cheese, lemon zest, salt, sweetened condensed milk, egg, and lemon juice in a bowl until everything is combined as there are no lumps.
(I just used an immersion blender for the whole thing)
Bake It
Pour onto the crust, and even it out. Bake for around 20 minutes, until filling is set.
Remove and cool for a couple hours, then place in fridge for at least a few hours before serving.
