Smoked Caramel Fudge Cookies

Chocolate Chip Cookies are a tasty classic, but what happens when you don't have any chocolate chips? This recipe does the trick, not to mention the added spunk of a smokey flavor from a pellet grill.
I typically do the majority of my Traeger smoking with meats for beef jerky, roasts, or pulled pork. However, there's a lot of opportunity for sweets in a pellet grill.
Ingredients
- 3/4 c. unsalted butter softened
- 3/4 c. brown sugar
- 1/4 c. granulated sugar
- 1 egg
- 2 tsp. vanilla extract
- 2 c. all-purpose flour
- 2 tsp. cornstarch
- 1 tsp. baking soda
- 1/2 tsp. salt
- Caramel sauce and fudge

- Preheat Traeger to 350 degrees F.
- Mix together the brown sugar, sugar, and butter until light and fluffy. Add an egg and the vanilla, mix.
- Mix in cornstarch, baking soda, flour, and salt.
- Fold in gently the caramel and fudge. Be careful not to blend it in so that it stays with a marbled texture.
- Roll balls of dough and place them onto a baking sheet.
- Bake for 15-17 minutes, until barely golden brown around the edges.

This recipe isn't necessarily the most straight forward. Typically when you make chocolate chip cookies they bake for about 8-10 minutes. When first making this recipe I had to let the cookies bake for longer and longer until they were the right consistency. I landed on about 15-17 minutes on the pellet grill.
As for wood, you can really use any kind you'd like, which is why I left it out of the instructions. I personally decided to use a blend of apple and maple.
The last note I would make is that you can absolutely use chocolate chips in this recipe. They will turn out a little sweeter than the original variation.
