Sweet Potato Home Fries
These spiced sweet potatoes are a welcome addition to the table on Thanksgiving. They are seasoned with allspice, cinnamon, and chili powder. This is a savory dish with only a hint of sweetness that comes from the potatoes themselves. Oven roasting gives them a beautiful golden-brown finish and keeps them from getting mushy. This dish is a great take-along item for holiday meals with friends and family.

3 medium sweet potatoes
1/4 teas Allspice
1/4 teas Cinnamon
1/4 teas Chili Powder

2 Tbsp Oil or Melted Butter
Cooking Spray (Pam or similar)

Parboil
Preheat the oven to 475 degrees. Spray a cookie sheet or shallow pan with cooking spray.
Put a large pot of water on the stove to boil.
Wash and peel the sweet potatoes. Cut into pieces about ¾-1" across on each side.
Place the potato pieces in the water and cook 5 minutes. Drain the potatoes and pour into a large bowl.

Toss with oil or butter, to lightly coat the sweet potatoes.

Bake in the oven, stirring every 5 minutes or so during baking to ensure even cooking.
