Tapioca Pudding: Old Fashioned

Tapioca pudding from the store is great but have you ever tried making it at home? Homemade tapioca pudding is simply the best and I got the perfect recipe for you, this classic old fashioned tapioca pudding that will leave you wanting more! Ingredients and Tools

Ingredients

  • 1/3 cup Small Pearl Tapioca
  • ¾ cup Water
  • 2 ¼ cups Milk
  • ¼ tsp Sea Salt
  • ½ cup Sugar divided
  • 2 Eggs separated
  • ½ tsp Vanilla Extract

Tools

Soak the Pearls

Soak the tapioca pearls in water for 1 hour in a 1 ½ quart saucepan. Do not drain remaining water, if any. (Do not try to use milk for this step just stick to water, it will not make them creamier). After an hour the pearls will have absorbed most of the water.

Separate Eggs

After the pearls soak, separate your egg yolk and your egg whites into two separate bowls. Lightly beaten the egg yolks and leave the egg whites aside for now.

Back to the Pearls

In the sauce pan, add milk, salt, ¼ cup sugar and the lightly beaten egg yolks to the soaked tapioca pearls. Whisk everything together gently until combined.

Heat

Stir over medium heat until boiling. Simmer uncovered over very low heat for 10-15 minutes. Stir often. Make sure to stir consistently so it won't burn.

Beat Egg Whites

While the pearls are on the heat, beat egg whites with remaining ¼ cup sugar until soft peaks form. Don't leave the pearls unattended too long!

Fold

Fold about ¾ cup of hot tapioca into the egg whites, then gently fold mixture back into saucepan.

Heat Again!

Stir over low heat for about 3 minutes. Cool 15 minutes then add vanilla.

Serve

Serve warm or chilled, plain or with fruits, nutmeg or coconut mixed in.
