Supplies
Ingredients required:
- Half cup Wheat flour
- 1/4 cup Chick pea flour ( Besan)
- 1/4 cup semolina ( Suji or Rava)
- One tbsp Coriander powder
- Red Chilli powder as per your spiceness
- Salt as per taste
- One TSP ginger garlic paste
- 1/4tsp Baking powder
- 1/4 cup finely chopped Cabbage
- Half cup grated Bottle gourd
- 1/3 cup finely chopped Carrot
- One tbsp Curd
- One TSP cooking oil
Vegetable Muthia










Muthia is a popular snack of Gujarat state in India. This Veg. Muthia is Steamed not Fried thus require No Oil for making. Muthia can be served as an evening snack with some Tea.
These Muthias are very healthy as we are using mixed vegetables and these are steamed instead of deep frying.
Most common vegetables used are cabbage, carrot and bottle gourd. You can also add radish.
Preparation Method:
Mixed vegetables are mixed with different flours and spices. A soft dough is made which is then rolled in to cylindrical shapes and steamed. These steamed rolls are then sliced and finally tempered and roasted till they turn crisp and brown. Tempering is done using cumin, mustard and sesame seeds. Sesame seeds gives nice nutty and crunchy flavour to Muthias.
Take Flours in a Bowl



Take a bowl and add Half cup of Wheat flour and 1/4 cup Chick pea flour (Besan)
Next add 1/4 cup fine semolina (Suji or rava) and give a mix.
Add Mixed Vegetables



After adding flours next add about 1/4 cup finely chopped Cabbage and 1/3 cup finely chopped Carrot.
Add Grated Bottle Gourd


Next add Half cup of grated Bottle gourd .
Add Spices



Add teaspoon ginger garlic paste.
Add Red chilli powder according to your spiceness.
Add Remaining Spices



Add teaspoon coriander powder and salt as per your taste.
Add Oil and Mix Everything


Add teaspoon oil and mix everything
Make a Dough

After mixing everything just gather the mixture and make a dough.
Add Baking Powder and Curd


Add 1/4 teaspoon Baking powder and One tablespoon curd (Yoghurt) .
Flatten Dough in to Cylindrical Shapes


Now take small portion of the dough and flatten in to cylindrical shapes as shown in images.
Steaming



Steam the rolled pieces. Take a vessel and add little water in it .Place the colander on top of the vessel. Place these flattened pieces on the colander and steam for 10 to 15 minutes.
Steaming Is Done

Steaming is done in 10 to 15 minutes.
Cut Them in to Slices


After steaming cut them in to slices.
Ingredients for Tempering



Ingredients for Tempering:
- Teaspoon mustard seeds
- Half teaspoon cumin seeds
- One tbsp Sesame seeds
- 2 green chillies
- One red chilli
- Few curry leaves
- Pinch of turmeric powder
- Pinch of asoefetida (Hing)
Tempering

Take little oil in wide pan. Add teaspoon mustard seeds, Half teaspoon cumin seeds and few curry leaves.
Add Green Chillies



Add pinch of hing (Asoefetida), Turmeric powder and sliced 2 green chillies and one red chilli.
(Adjust chillies and chilli powder according to your spice levels)
Adding hing is also optional. If it's not available you can skip it.
Add Sesame Seeds


Add tablespoon Sesame seeds. Adding sesame gives nice crunchy flavour to muthias.
Place the Sliced Muthias

Now place the sliced Muthias .
Roast


Roast on both sides by flipping on both sides until they turn crisp and brown.
Finally garnish with coriander leaves.
Vegetable Muthias Are Ready

Vegetable Muthias are ready to be served with some tea.
