(mini) Vegan Coconut Cake!

this is a smaller size of a regular coconut cake! perfect for when you only want it to last a few days or if you just want to try out new recipe. it is also vegan!
Supplies

supplies:
-bowl
-spatula
-6 in. cake pan
-oven
-electric mixer
ingredients (cake):
-1.75 cups and 2 tsp flour
-1 cup sugar
-1 tsp baking soda
-1/2 tsp salt
-1 1/3 cup shredded coconut
-1 cup coconut milk
-1/3 cup coconut oil
-2 tsp apple cider vinegar
-5/8 tsp vanilla extract
-1/2 tsp coconut extract (optional)
ingredients (frosting):
-1 can coconut cream
-1/2 cup powdered sugar
-1 tsp vanilla
-4 tbsp cornstarch
Mix Dry Ingredients

start with adding all of the dry ingredients (flour, sugar, baking soda, salt, coconut) into a bowl and mix . you can preheat the oven to 350 degrees while you make the batter.
Mix Wet Ingredients

melt the coconut oil if not already liquid. the coconut milk can be drained from the can of coconut cream, only the thick part will be used later on. add coconut oil, coconut milk, vinegar, and vanilla into the bowl containing the dry ingredients and mix thoroughly to combine. coconut will add texture so it's okay if it isn't completely smooth. it should be relatively thick, if too runny, add more coconut milk.
Put Cake in Oven

once oven is preheated, add half of the batter into a greased 6 in. cake pan. it will make enough for two layers in the 6 in. pan. if you have more than one pan, you can add the other half into it now and bake them together. bake for 27-30 minutes or until toothpick inserted comes out clean, tops should be a golden brown. if you only have one cake pan, let the first one cool until you can take it out of pan, and then add rest of batter in.
Make Frosting

while you wait for the cakes to cool, you can make the frosting. if you are short on time, other pre-made frosting works well too. to make the coconut frosting, add the thick layer from one can of coconut cream into a bowl. mix with the vanilla extract, powdered sugar and cornstarch using an electric mixer at high speeds. depending on the brand of coconut cream, your texture might be different, so continue adding more powdered sugar until consistency is thick enough to put on cake
Assemble Cake

once cake is fully cooled, add one layer on top of the other. add frosting around the sides and on top(it will melt and run if the cakes aren't fully cooled!). once frosting is on and smoothed, cover sides and top in coconut shreds. after that, your cake is all ready to be eaten. enjoy!
